Bite with Belkys: Swordfish Milanese

What could be better than a day at the beach? Topping it off at an ocean-side restaurant. A chef is showing us how to make her top selling fish dish. Time to grab A Bite With Belkys.

The Chef: Lisa Stork
The Dish: Swordfish Milanese

Ingredients for swordfish:

4 8 oz. swordfish steaks, about 1/2 inch thick
Salt and pepper, to taste
Juice of one lemon
1 cup of flour
3 large eggs, beaten
1 1/2 cup of panko (Japanese breadcrumbs)
4 tbs. of vegetable oil

Method of Preparation:

-Start by seasoning the swordfish with salt, pepper and lemon juice.

-Then coat the fish with flour, eggs and breadcrumbs.

-Now, in a hot pan with vegetable oil, sear the fillet for about one minute on each side. Chef Lisa says to be careful the oil is not too hot because it will burn the bread crumbs.

-Finish the fish in a 350 degree oven for about seven minutes or until it's a nice golden brown.

Ingredients for side pasta:

1 lb. of spaghetti noodles
28 oz. of tomato sauce

Method of Preparation:

-Now, boil some noodles in a pot of boiling water, and then make sure to strain them well.

-Combine the noodles with tomato sauce. Chef Lisa likes to make her own marinara sauce at the restaurant.

Ingredients for side salad:

3 garlic cloves, minced
2 tbs. of extra virgin olive oil
Juice of one lemon
3 cups of lightly packaged Arugula

Method of Preparation:

-In a large bowl mix minced garlic, extra virgin olive oil, lemon juice and arugula. The lemon vinaigrette will offset the breading on the fish.

To Plate the Dish:

Pour a scoop of tomato sauce on the plate, and top it of with the fish. Then place some on the arugula salad over the fish. At the restaurant, chef Lisa serves the pasta on a side dish and garnishes it with some fresh, chopped basil.

Serving Suggestion: Pinot Grigio
